Spring-fever hits us Wisconsinites well before we experience any true and lasting signs of spring. Winters here are long. Ruthless may be a better description, actually. Those first few mild days have us craving lighter and brighter foods, we fire up the grill and even wear shorts (yeah, you know who you are) even though it hasn’t reached 50 degrees.
The smell of charcoal has my boys buzzing about dinner. The neighbor kids even yelled the other day, “hey your mom is grilling up STEAKS!” Spring Cut Cattle Co. steaks nonetheless, wink, wink. I think they were hoping for an invite.
The flavor I crave immediately as we turn the page into this season is LEMON. I begin almost every morning with a super nutrient-dense smoothie studded with one of my Wellmade Restorative superfoods blends I created last year.

Lemon Chia Seed Smoothie Bowl
Ingredients
- 1 cup nut milk
- 1 cup frozen cauliflower
- 1/2 cup coconut milk yogurt
- 1 scoop Wellmade Restorative Fortify
- 1 tbsp honey
- 1 tbsp coconut or almond butter
- 1/4 tsp himalayan sea salt
- zest of a lemon
- 1 inch piece of fresh ginger, peeled
- 1 tsp chia seeds (optional)
Instructions
- Combine all ingredients into a blender. Blend, using the tamper to push down cauliflower until all ingredients are smooth and resemble soft-serve ice cream.If you would like this is smoothie form opposed to in a bowl, add more milk and cut down on the cauliflower a little bit.Top with granola and bee pollen if desired.
