Fall is setting in and I seem to be finding myself spending more time in the kitchen than those busy summer months. Here are a few of my go-to meals and snacks to keep my family healthy and satisfied as we approach a new season.
The Classic Beef Roast
This is a simple home-cooked meal that pairs well with mashed potatoes, vegetables, and the cooler months.
- Preheat oven the to 400 degrees.
- Place 3-4 lbs. (thawed) roast, uncovered, into Dutch oven. Add 1 inch of water to the bottom of the pan. Season with salt, pepper, and garlic.
- Put roast, uncovered, into oven for 1 hour.
- After 1 hour, cover roast and lower oven temperature to 220 degrees.
- Cook roast for 3-4 more hours.
Tip: I like to add turmeric as well. Turmeric has amazing health benefits. It aids in digestion, detoxifies the liver, and reduces inflammation – just to name a few!
Dinner on the Fly: Burgers
Our pre-pattied burgers are perfect when I didn’t take the time to think about or prepare something for the day’s dinner.
- Just take them out of the freezer and pull apart the frozen patties.
- Toss them on the grill and enjoy with a salad.
Tip: I absolutely love, Primal Kitchen’s Thousand Island dressing. I make a lettuce salad with tomatoes, red onions, cheese, and pickles. Top it with a burger and some Primal Kitchen Thousand Island dressing – Healthiest version of the Big Mac!
Sheet Nachos
These are Reese’s favorite!
- Place your chips on a baking sheet. Siete Cassava flour chips are our family’s go-to gluten-free chip.
- Top your chips with fried onions, peppers, jalapenos, cheese, cucumbers, tomatoes and Spring Cut ground beef.
Tip: Prepare taco meat ahead of time and freeze for quick meals.
Date Night In: Steak
Our Spring Cut steak pairs nicely with quinoa and a fresh veggie for the perfect date night in.
- Remove steak from the freezer and allow to thaw.
- Grill Spring Cut steak and enjoy!
Tip: Steak leftovers are a favorite at our house. Pair with our pasture-raised scrambled eggs the next day for breakfast.
